- 3 cups thinly sliced sweet onions
- 1 tbsp. olive oil or ghee
- 1/4 tsp. salt
- 4 cups spinach
- Sprinkle of non-dairy cheese of choice
- 1 tsp. chopped garlic
- 3 cups egg whites or fat-free liquid egg substitute
