Vegetable Lentil Soup With Smoked Paprika and Cumin

 

How’s the first week of January going for you?? I don’t know about you, but it’s been kind of hard getting back to work and into the swing of things…right??

On the top of my “to-do” list was getting rid of any junk left in the house and stocking the fridge with loads of healthy options.

I decided in order to really clean up my diet in a nice and gentle way, I would make a delicious, nutritious, hearty soup that I could have each day this week. It’s been a real life saver! In addition to it being packed with veggies, it’s loaded with warming spices and delicious lentils to keep me feeling full, but not bloated in any way. I started my lunches and dinners with this soup and on some days, didn’t need much more. I sort of used this soup as a mini cleanse and it’s worked beautifully! I hope that you give it a try!

 

Ingredients:

  • 2 zucchini
  • 2 yellow squash
  • 1 package of mushrooms
  • ½ butternut squash
  • 1 container of mirepoix (carrots, onions and celery)
  • 2 garlic cloves- minced
  • 1 bundle asparagus
  • ½ head broccoli
  • 1 savoy cabbage
  • 2 boxes of organic vegetable broth
  • 1 jar tomato sauce of choice
  • 1 cup lentils
  • salt and pepper to taste
  • 1 Tbsp smoked paprika
  • 1 Tbsp cumin
  • 1 Tbsp coriander

 

Directions:

Step 1. Wash and chop all of the veggies into bite size pieces.

Step 2. Saute the mirepoix and garlic in a Tbsp of olive oil in a large stockpot.

Step 3. Once browned, add all the vegetables, stock, tomato sauce and spices.

Step 4. Allow to cook about 10 minutes and then add in the lentils.

Step 5. Bring to a boil and simmer, covered for about an hour.

Step 6. Optional – If you like a “thicker” soup, once cooled off, puree in a Vitamix or with an immersion blender.

* Feel free to add any other veggies of choice! You can’t make a mistake!
