VEGGIES ARE MY JAM! Years ago, I never ate anything green, but as I found my happy place with food, veggies became my best friend! They fill me up, and they really do make my body feel alive, clean and energetic. I know that may sound odd to some of you, but if you’re anything like me, you know what I mean! 😉
This plate is full of color, and I know it’s fueling my body with all of the nutrients and vitamins it deserves. Roasting vegetables is a great way to make them taste good, and a real time saver as it can be done in advance. HELLO SUNDAY PREP!! 🙌
I love roasting a huge batch of veggies that I know I can use for a few meals.
Sometimes I go simple with just some salt and pepper, but I love amping up the flavor with spices too!
One of my favorites is the umami seasoning from @traderjoes! If you like spicy, you gotta try it! I also love drizzling flavored vinegars from @olivertwistoliveoil on the veggies once done…it’s amazing! 💥
I aim for 5-10 ounces of mixed greens and veggies at lunch and dinner. I always have a mix of raw, steamed and roasted…I love the different textures! I know having that much will give me the appropriate amount of fiber for the day and will help to keep me full.
