This Zo Healthy Veggie Chicken Bowl makes a good “go-to”. I love making bowls for lunch or even dinner because they are so filling and packed full of amazing ingredients! This bowl includes arugula, but any combination of greens will do.
Arugula is a lesser known cruciferous vegetable that provides many of the same benefits as other vegetables of the same family, which include broccoli, kale, and Brussels sprouts.
When I’m making my bowls at home, I usually don’t use an exact recipe, I just try to make sure that half of the bowl is veggies and the other half is split between some protein and complex carbs (today I used quinoa, but I also love sweet potato!).
I top with my favorite Tahini Goddess dressing, add some crunch, and I’m done! So quick, healthy, and tastes delicious.
- Roasted Veggies
- Grilled Chicken
- Tahini Dressing
- Topped with microgreens and some hempseed for crunch!
Toss into a bowl, top with dressing and enjoy!
